Анотація

У статті розглянуто різні класи хімічних сполук винограду і вина, їхні хімічні та біохімічні перетворення, що впливають на формування аромату і букету вина.

Походження аромату і букету вина представляє великий інтерес протягом останнього століття у зв’язку з досягненнями сучасних аналітичних, сенсорних методів, багатовимірних статистичних порівнянь. Аромат вина містить фактично 90 % всієї інформації про напій. У світовій енологічній та науково-дослідницькій практиці розроблено методичні підходи до сенсорної оцінки аромату/букету виноматеріалів і вин, які дозволяють в числовому вираженні відобразити його особливості за інтенсивністю окремих відтінків. Однак, суб’єктивність органолептичного методу не дозволяє використовувати його як основний. Комплекс аналітичних і сенсорних методик є особливо важливим у вирішенні впливу взаємодій ароматичних сполук з нелеткими сполуками, а також з іншими леткими речовинами. Ці взаємодії можуть призвести до змін ароматичного профілю вина за рахунок поліпшення сприйняття і зменшення негативних ефектів, а також завдяки фізико-хімічному впливу на леткість та виділення ароматичних сполук.
