Abstract

Technical gases are widely used in the production and storage of foodstuff as well as in greenhouses for growing intensification and ripening acceleration of vegetables and fruit. The modern level of technical equipment has allowed to increase the production output of gas substances and to expand their nomenclature. The systems for gas mixtures preparation and the devices for the control over their composition have been developed. The scope of application of pure gases and the combined substances in the course of foodstuff production and storage has been described. The features of storage and use of СО2, N2 and Ar for these purposes in different states of aggregation are considered. The equipment for the use of СО2 in the processes of biologically active substances extraction has been developed and tested. The examples of solving the engineering problems of the gases application in food industry have been presented.
