Ветеринарно-санітарний контроль мікробіологічних показників яловичих туш та санітарних умов їх виробництва

Визначено, що кількість бактерій родини Enterobacteriaceae та показник КМАФАнМ на поверхнях туш яловичини залежать від рівня санітарії на забійних підприємствах, від пори року, від місця відбору проб. Встановлено, що за умови належного рівня санітарії кількість бактерій родини Enterobacteriaceae на поверхні туші в середньому становила: після зняття шкури 3,22±0,7 Log КУО/см2, а після нутрування – 3,37±0,7 Log КУО/см2.
