FEATURES OF TECHNOLOGICAL PROPERTIES AND CHEMICAL COMPOSITION OF NAKED OATS CULTIVAR «SALOMON»

Abstract

In this work presents the major technological and physico-chemical properties of naked oat cultivar "Salomon" grown in Kirovograd region. The basic advantages of the new culture in the production of cereal products compared with traditional cultivars of oats were found. The advantages of studied naked cultivar of oats is the high values of indicator volume weight and low values of indicator content of hull grain compared to traditional varieties. Almost total absence of hard floral hulls on surface of naked of oats, velevance some of indicators of technological proprieties of test samples to requirements for conventional forms simplify the technological process of manufacturing oats food products. Cultivar of naked oats «Salomon» has a well balanced chemical composition compared to the averages values for traditional oat cultivars and food products of their processing. Obtained data allow considering the potential for production products with the standard quality of the existing range, or products with high biological and nutritional value from naked oats.
