Effectiveness research of new catalyst for oil and fat interesterification by using chromatographic analysis

Abstract

Distribution of interesterification process as a tool for oil and fat modification, as well as the need to import industrial catalysts that are unstable chemical compounds and dangerous in terms of safety, determine the feasibility of introducing new interesterification catalysts.

In this article the efficiency of the new interesterification catalyst – potassium glycerate, which were obtained in the laboratory conditions is investigated. As a result of chromatographic analysis it was found a change of triacyglyceride composition of palm olein after the interesterification reaction in the presence of potassium glycerate and industrial catalysts sodium methylate. The study of calculated statistically equilibrium triacyglyceride composition and output and interesterificated samples of palm olein showed that triacyglyceride composition obtained after reaction with potassium glycerate is more close to settlement. So potassium glycerate is an effective catalyst for chemical interesterification of fats. The results of the study confirmed the possibility of using potassium glycerate in enterprises of oil and fat industry with the process of interesterification of oils and fats. Moreover, it can get directly at the enterprise.
