Business models in the catering industry in Ukraine: development trends and innovative approaches

The article identifies the main trends and challenges of public catering in Ukraine in modern conditions. The analysis shows that catering companies should adapt their business models to new challenges and ensure compliance with the principles of sustainable development of the country. Increased consumer awareness of health and the environment is driving the shift to business models focused on healthy eating and the growing demand for organic and environmentally friendly products. As a result, innovative approaches to organising such businesses will not only contribute to economic development, but will also have a positive impact on the health of the nation and the sustainable development of society as a whole.
