Scientific justification of physical methods of identification of cultivated mushrooms

The rapid development of mushroom cultivation in Ukraine and the cooperation agreement between Ukraine and China in the sphere of agriculture require the development and improvement of methods for quality examination, identification and detection of possible fabrication of cultivated mushrooms and food products made of them by specialists in the field of commodity and quality research. The article grounds scientifically the physical methods of research that can be used as identification criteria of widely spread in the Ukrainian market cultivated mushrooms. The article presents a method of preparation of mushrooms to the analysis, which implies their separation into two groups: solid (cake) and liquid (plasma). There are the main results obtained and the laws determining the electrical, cryoscopic and optical properties of mushroom plasmas, which can be regarded as the defining characteristics during the identification of cultivated mushroomsReferences
