The article investigates the electrophysical properties of fresh tomatoes and sweet peppers of different growing conditions. Such methods of quality assessment have become widespread. The main objective was to identify differences according to the selected properties that would provide the information about the stuff for the content of unnatural chemical components (antibiotics, GMO, growth accelerators, etc.). The stuff for the analysis, vegetable plasmas, was obtained by four-time cyclic spinning-filtering-freezing according to certain parameters. The measurements were carried out on an experimental unit with metal electrodes. We studied the kinetics of current strength of vegetable plasmas in the units at a constant voltage; their current-voltage characteristic, which is the dependence of current on the value and polarity of the applied voltage; and the electromotive force that arises at the electrodes immersed in plasma and made of different pairs of metals. The results can be used in laboratories occupied with the identification and fabrication of the plant stuff. All studied properties can serve as a basis when determining the quality of fresh tomatoes or sweet peppers, as well as of the processed productsReferences
